Bok Choy with Shiitake Mushrooms

This is such a delicious and simple meal. I often see Wuxia series where people are eating bok choy and shiitake mushrooms and makes me so hungry, so I tried to make it myself.

(Yields: 1 bowl, Serving: 1, Prep time: 5 mins, Cook time: 15 mins)

Ingredients

  • 1 tablespoon olive oil
  • 4-5 shiitake mushrooms
  • 2 large bok choy (or 5-6 little bok choy)
  • 1/2 teaspoon corn starch
  • 4 tablespoon water
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon superior pickle sauce (or cooking wine)

Note: This recipe goes very well with rice!

Instructions:

Soak shiitake mushrooms overnight with water. Make sure you absolutely drain it well and throw away any yellow water and rinse again.

Cut shiitake mushrooms in small pieces and cut the bok choy so that stems and leaves are separate.

Put olive oil in the pan and stir fry shiitake mushrooms for about 2-3 minutes until you smell a whiff of fragrance.

Add only the bok choy stems and cook for about 5-7 minutes.

Add the rest of the bok choy leaves.

Mix 4 tablespoons of water with corn starch and pour it in the pan.

Add the remaining spices and stir in medium heat for about 5 minutes or until the bok choy have softened.
