Berry Fruity Energy Bars
(Yields: 4 bars, Serving: 2, Prep time: 15 mins, Cook time: 10 mins)
- 1 cup mixed blueberries and raspberries
- 2 tablespoons raisins (add more if desired)
- 1/4 cup mixed pecans and sliced almonds (about 2 tablespoons of each)
- 1 cup and 1 tablespoon instant oats
- 1/4 cup buckwheat flour
Note: This bar isn’t that particularly sweet, but that’s the point! If need it sweeter, I recommend adding more raisins!
Add the mixed blueberries, raspberries and and 1 tablespoons of raisins in a bowl.
Take about 1/4 cup of the mixed fruits out and set aside for later use and measure and add the pecans, almonds, 1 cup of oats (only) and buckwheat flour.
Put everything in a blender and blend until most of it is smooth.
Preheat oven to 400°F (204°C).
Spoon the mixture out into a bowl.
Add the remaining mixed fruits, 1 tablespoon of raisins and 1 tablespoon of oatmeal.
Use a fork or spoon and stir.
Press it down in an oven tray.
(If you want it sweeter, add some extra raisins!)
Bake it in the oven for 10 minutes.
