(Yields: 1 plate, Serving: 1, Prep time: 5 mins, Cook time: 10 mins)
- 1 orange
- 1 tablespoon pomegranate seeds
- 1 teaspoon olive oil
- A sprinkle of pepper (optional)
- 3-4 mint leaves
Cut skin and rind off the orange. (Don’t throw away the rind, it’s super healthy!)
Then, cut the oranges in thin circles sideways. Any extras can be be juiced later, so don’t throw anything out.
Arrange oranges on a plate, then sprinkle the pomegranate seeds and mint on top.
In a separate bowl, put 1 teaspoon of olive oil with any juice left over from the orange or pomegranates and mix well. Then, drizzle over the oranges.
If you want, sprinkle a tiny but of pepper, and it’s ready to go.
