Hummus (Chickpea Dip)
I absolutely loved the chickpea dip at a Greek restaurant we recently went to, and unfortunately because most supermarket bought ones tasted like Doritos, I decided to make my own.
(Yields: 1 bowl, Serving: 2, Prep time: 10 mins, Cook time: 15 mins)
Ingredients
- 1 can cooked chickpeas
- 3 cloves garlic
- 1/2 cup water
- 3 tablespoons tahini
- 1 teaspoon lemon juice
- 1 tablespoon garlic mince
- 1/4 teaspoon sea salt
- 2-3 tablespoons olive oil
- Parsley leaves or olive (for garnish)
Instructions
Let’s look at our main ingredients:
Drain the chickpeas and rinse.
Put garlic cloves and chickpeas in the blender.
Once most of the chickpeas are well mashed, add the 1/2 cup of water and blend again until it’s very smooth.
Bring the mixture into the frying pan and turn the heat on medium high.
Add the tahini, lemon juice, garlic mince and sea salt. Stir for about 5 minutes in the frying pan.
Finally, add the olive oil and stir for a further 2-3 minutes and turn off the heat.
Garnish with parsley leaves or olive. (Optional)
