Scallion Whole Wheat Bread Bun
(Yields: 4 buns, Serving: 2, Prep time: 2 hrs 30 mins, Cook time: mins)
Ingredients
- 2 1/2 cups whole wheat flour
- A sprinkle of Himalayan/sea salt
- 1 cup warm water
- 1 tablespoon dry active yeast
Scallion Mix
- 3-4 large scallions
- 1 tablespoon extra light olive oil
- 1 teaspoon sesame oil
- 1/4 teaspoon sea salt
- Olive oil for brushing
- Himalayan/Sea salt for sprinkling
Instructions
Prepare the ingredients:
(You should see some foaming bubbles)
Mix the water and yeast with the flour and stir.
Knead the dough until it’s very smooth, yet non-sticky.
Let it rise in a warm place for about 2 hours.
While the dough is rising:
Chop the scallions into very tiny pieces and mix it with the two oils and salt. Set aside!
Once the dough has risen twice the size, punch it down and knead again.
Use a rolling pin and make a rough circle.
Spread the scallion mixture on top.
Cut the circle into four equal pieces.
Take the corners of one of the pieces and fold them upward.
Make a sphere and keep rolling it until the shape becomes rounder.
Do the same to the other three.
Preheat oven to 370°F (187°C).
Line parchment paper on a baking tray and place the four bun on it, leaving lots of space between the four.
Brush enough olive oil to cover the top of the bread.
Sprinkle a tiny bit of salt on top.
While the oven is heating up, let the dough sit to rise more.
Bake in the oven for about 30 minutes.
